At this year\u2019s San Diego Bay Food + Wine event, there were several new standouts who brought their ‘A game’. I\u2019ll cover these over the next week, but I simply must tell you all about one company in particular because I know everyone will be shopping for the holidays soon and this is just one of those very cool foodie products that will make a ridiculously great gift. <\/p>\n

Nate and crew from the Ohio based Bissell Maple Farm<\/a> blew into sunny San Diego with the most amazing maple syrup. Their gourmet and extremely high-end maple syrup is aged in American Oak bourbon barrels. The bourbon flavor character remains inside barrel walls and is absorbed into the charred oak. So, the maple syrup that ages in these bourbon barrels gets this fabulous essence as it ages for months until the Maple Masters decide the flavor is just right. And, when I say Maple Masters, that is just what they are. The Bissell Maple Farm is a family owned and has been producing maple syrup for over 100 years – that’s the 6th generation of farmers producing! <\/p>\n

\"\"<\/p>\n

This syrup has a deep rich maple flavor and just a slight bourbon finish. It would be outstanding drizzled on baked yams or sweet potatoes, ice cream or used on roasted glazed salmon.<\/p>\n

For the holidays, we crave warmth and comfort foods. Package one of these gorgeous Bourbon Barrel Aged Maple Syrups with a bottle of Bourbon, and make sure to include this recipe.<\/p>\n

Maple Bourbon Smash<\/strong><\/p>\n

1\/2 ounce Bourbon Barrel Aged Maple Syrup
\n\t1\/2 ounce fresh orange juice
\n\t1\/4 ounce fresh lemon juice
\n\t4 dashes of bitters
\n\t1\/2 orange wheel
\n\t2 ounces bourbon
\n\tIce
\n\t1 1\/2 ounces chilled seltzer<\/p>\n

In a rocks glass, combine the maple syrup with the orange juice, lemon juice and bitters. Add the orange wheel and lightly muddle. Add the bourbon and stir well. Fill the glass with ice and top with the chilled seltzer.<\/p>\n

Spicy Maple Cinnamon Hot Chocolate<\/strong><\/p>\n

Serves 2-3
\n\tThis recipe makes for a very rich drink, so dilute with more milk if you want to make it less sweet.<\/p>\n

6 tablespoons Dutch process cocoa
\n\t2 \u2013 3 tablespoons Bourbon Barrel Aged Maple Syrup
\n\t1\/2 teaspoon ground cinnamon
\n\t1\/2 teaspoon chili powder
\n\t1\/4 teaspoon ground cayenne
\n\t1\/2 cup heavy whipping cream
\n\tcinnamon sticks for garnish (optional)<\/p>\n

Pour the milk into a medium-sized sauce pan and set over medium-low heat. Make sure not to scorch.  Whisk in the chocolate, maple syrup, and spices. Continue whisking occasionally until milk is hot and steamy.<\/p>\n

Meanwhile, whisk the heavy whipping cream to soft peaks. Pour steaming hot chocolate into mugs, add a dollop of whipped cream and a cinnamon stick, and finish with a pinch of chili powder.<\/p>\n
