It&#8217;s not only a day to celebrate my cherished relationship with my husband, but it&#8217;s also a &#8216;month&#8217; whereby I celebrate my great friends. Here&#8217;s a super easy dinner to prepare for friends to say &#8216;thank you&#8217;, and best of all it&#8217;s nutritious and heart healthy!<\/div>\n<p><!--more--><\/p>\n<div class=\"body\">\n<p><!--break--><\/p>\n<p>Part of good heart health is not only a balanced diet and exercise, but living a stress-free life. This dinner is so easy and I promise completely stress-free. Not only can you crank it out (literally! with a zuchinni spiralizer) in seconds, but the prep is less than ten minutes. It&#8217;s also gorgeous!<\/p>\n<p>When setting the table, put a little Valentine&#8217;s Day message on each plate! Rose&#8217; is also the perfect light wine to pair with this dinner.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/valdaydinner.png\" alt=\"\" \/><\/p>\n<h2><strong>Spialized Zucchini Noodles with Heirloom Tomaotes &amp; Capers<\/strong><\/h2>\n<p><img decoding=\"async\" style=\"width: 750px; height: 364px;\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/dinnerplateyhy.jpg\" alt=\"\" \/><\/p>\n<p><strong>How to Make:<\/strong><\/p>\n<p>With a Zuchinni Spiralizer, quickly crank out noodles. One zucchini per person is plenty, in fact you&#8217;ll have leftovers. In a hot pan, heat high-quality olive oil and add noodles.<\/p>\n<p><img decoding=\"async\" style=\"width: 750px; height: 370px;\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/hotzucchini.png\" alt=\"\" \/><\/p>\n<p>Stir on high heat until they start to go a little limp. Add 1\/2 teaspoon of salt (per zucchini), 4-5 heirloom cherry tomatoes (halved), 1\/2 tablepoon capers and a little fresh flat leaf parsley in at the last minute, Cooking should be no more than 3-4 minutes total in a hot pan. Serve fresh and hot!<\/p>\n<p>Freshly squeezed lemon is nice on this, or a little shaved Parmesan cheese.<\/p>\n<h2><strong>Spinach and Arugula Salad with Carmelized Pecans &amp; Blackberries in a Balsamic Reduction Sauce<\/strong><\/h2>\n<p>Round wide Salad plates are perfect for this dinner or these <a href=\"https:\/\/amzn.to\/4osK5JY\"><strong>scallop edged plates by YHY on Amazon<\/strong><\/a>.
