Make the most of groceries, reduce trash and food waste, and save yourself money with these 12 simple ideas.<\/span><!--more--><\/p>\n<p><b>Vegetable trimmings<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Add all inedible vegetable trimmings\u2014carrot peels, zucchini stems, onion ends, celery root ends and more\u2014to a large\u00a0ziptop\u00a0bag in the freezer. When the bag is full, add trimmings to a large stockpot, cover with water, and simmer for 4\u20136 hours to make rich vegetable stock.<\/span><\/p>\n<p><b>Apple peels<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Toss with a bit of sugar and cinnamon. Bake on a parchment-lined baking sheet at\u00a0400\u02da\u00a0for 10 minutes to make chips.<\/span><\/p>\n<p><b>Citrus peels<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Peel the outer skin of citrus, avoiding as much of the white pith as possible. Dry in a\u00a0200\u02da\u00a0oven for 2\u20133 hours, and add to herbal teas. You can also infuse water by tossing peels in and letting them steep for a while.<\/span><\/p>\n<p><b>Darkening bananas<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Of course, you can always use past-their-prime bananas to make banana bread. But they\u2019re also good in smoothies and milkshakes, or frozen slightly and blended into one-ingredient \u201cice cream\u201d or whipped into a nutritious pudding with avocado and peanut butter.<\/span><\/p>\n<p><b>Herb stems<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Use parsley or basil stems right along with the leaves in a batch of pesto.<\/span><\/p>\n<p><b>Parmesan rinds<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Add to a simmering pot of minestrone or chicken noodle soup to impart flavor.<\/span><\/p>\n<p><b>Potato peels<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Make chips by tossing potato peels with a drizzle of olive oil and salt. Bake on a rimmed baking sheet at\u00a0400\u02da\u00a0for about 10 minutes.<\/span><\/p>\n<p><b>Romaine lettuce<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Chop the thick outer leaves into slivers; then\u00a0saut\u00e9\u00a0quickly in olive oil with a thinly sliced garlic clove, salt and pepper.<\/span><\/p>\n<p><b>Stale bread<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Toast, and crumble into bread crumbs to use in meatballs. Or cube, and toss with tomatoes, diced cucumber, chickpeas and vinaigrette for a quick\u00a0panzanella-style\u00a0salad. You can also toast and toss into a food processor. Use bread crumbs right away, or store in a\u00a0ziptop\u00a0bag in the freezer.<\/span><\/p>\n<p><b>Vanilla beans<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Cover scraped vanilla beans completely in sugar in an airtight container.
