{"id":16723,"date":"2020-02-04T18:29:14","date_gmt":"2020-02-04T18:29:14","guid":{"rendered":"https:\/\/www.boredmom.com\/?p=16723"},"modified":"2020-02-04T19:35:13","modified_gmt":"2020-02-04T19:35:13","slug":"spicy-orange-root-vegetable-stew","status":"publish","type":"post","link":"https:\/\/stage.boredmom.com\/?p=16723","title":{"rendered":"Spicy Orange Root Vegetable Stew"},"content":{"rendered":"<p>I modified this recipe from a recent issue of Food &amp; Wine &#8211; their recipe used pot-roast, so I made some tweaks for a vegetarian version.<!--more--><\/p>\n<p>The simmered flavors of fresh orange and chilies pair really well with turnips and sweet potatoes!\u00a0 You may serve this as is, or on top of a grain such as quinoa, bulgur wheat, cous cous, rice, etc.<\/p>\n<h3><strong>You Will Need:<\/strong><\/h3>\n<ul>\n<li>1\/2 cup olive oil<\/li>\n<li>4 tsp salt<\/li>\n<li>1 tsp black pepper<\/li>\n<li>1 whole orange, scrubbed clean, sliced and cubed<\/li>\n<li>1 medium onion, diced<\/li>\n<li>1 cup diced celery<\/li>\n<li>4 cups of vegetable stock<\/li>\n<li>1 28 oz can of crushed tomatoes<\/li>\n<li>1 + tsp of dried red chili flakes (dial it up if you like heat)<\/li>\n<li>1\/2 tsp fine cayenne pepper<\/li>\n<li>1 large sweet potato, peeled and cubed<\/li>\n<li>2 turnips, peeled and cubed<\/li>\n<li>1\/2 cup of fresh parsley<\/li>\n<\/ul>\n<h3><strong>How to Prepare:<\/strong><\/h3>\n<p>In a large dutch oven, heat oil, onions and celery until slightly soft.
