So here we are months later, still pandemic-ing, but truth be told, fresh produce has not been hard to come by. <!--more-->I thank the Farmers of America for their continued production and those who work picking our food so it&#8217;s able to go through the supply chain! My heroes!<br \/>\nIn trying to whittle down my collection of large containers of food, I found several glass jars of canned peaches. I decided to make a fruit bake with some extra pears and blueberries that were starting to look a tad past their prime and the result was delicious!<\/p>\n<p>Using oats and dried coconut flakes as a base, the fruit juice in the peaches added enough liquid to cook the bottom layer.<\/p>\n<h2><strong>You will need:<\/strong><\/h2>\n<ul>\n<li>1 large jar of canned peaches<\/li>\n<li>1 pear, sliced thin<\/li>\n<li>1 cup of blueberries<\/li>\n<li>1-1\/2 cups oats<\/li>\n<li>2 tablespoons butter, softening<\/li>\n<li>1\/2 cup coconut flakes<\/li>\n<li>2 tablespoons sugar or stevia substitute<\/li>\n<li>1 tsp cinnamon<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-19461\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2020\/08\/baked-fruit-plated-2.png\" alt=\"\" width=\"810\" height=\"450\" data-kale-share-title=\"Coconut Oat Fruit Bake\" data-kale-share-url=\"https:\/\/www.boredmom.com\/food\/coconut-oat-fruit-bake\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2020\/08\/baked-fruit-plated-2.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2020\/08\/baked-fruit-plated-2-300x166.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2020\/08\/baked-fruit-plated-2-1024x568.png 1024w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2020\/08\/baked-fruit-plated-2-768x426.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2020\/08\/baked-fruit-plated-2-500x277.png 500w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2020\/08\/baked-fruit-plated-2-1800x1000.png 1800w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2020\/08\/baked-fruit-plated-2-1536x853.png 1536w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2020\/08\/baked-fruit-plated-2-2048x1137.png 2048w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<h2><strong>How to prepare:<\/strong><\/h2>\n<p>In a glass bowl, soften butter and mix with oats, flour, sugar, cinnamon and coconut flakes. Mixture will be crumbly. Pour into a low edge Corning Ware pie or baking dish.<\/p>\n<p>Flatten mixture onto the bottom with a fork.<\/p>\n<p>Artfully lay the fruit on top of the oat mixture. It&#8217;s OK if the fruit has some juice on it.
