I shortened this recipe up even more by layering corn tortillas (triple layer) versus rolling individual enchiladas. This bake takes less than 30 minutes to assemble and pop in the oven, and it got rave reviews at dinner time (no leftovers!)<\/p>\n<h2>You Will Need:<\/h2>\n<ul>\n<li>1 8oz\u00a0Pouch of\u00a0<a href=\"https:\/\/amzn.to\/417he45\"><strong>Simply Organic Red Enchilada Simmer Sauce<\/strong><\/a><\/li>\n<li>1 Tablespoon Olive Oil<\/li>\n<li>2 Zucchinis diced<\/li>\n<li>2 Red or Yellow Peppers diced<\/li>\n<li>1 Block of Tofu, diced<\/li>\n<li>12 Corn Tortillas<\/li>\n<li>1 Can of Black Beans<\/li>\n<li>1\/4 teaspoon of Tumeric<\/li>\n<li>1\/4 teaspoon of Salt<\/li>\n<li>1\/2 cup of crumbled Cotija Cheese<\/li>\n<li>3\/4 cup shredded Cheddar Cheese<\/li>\n<\/ul>\n<h2>How To Prepare:<\/h2>\n<p>Makes 14&#8243; pan of enchilada bake. (Serves 6)<\/p>\n<p>Preheat oven to 350 degrees.<\/p>\n<p>Add the olive oil to a saute&#8217; pan and add tofu chunks. Saute on medium heat until some of the moisture cooks out. Add 1\/4 teaspoon of turmeric. Saute&#8217; on low for 5 minutes.
