Do not cook hollowed bottom part &#8211; put aside for later.<\/p>\n<p>Roast top and other squash chunks at 400 degrees for 40 minutes.<\/p>\n<p>Let squash cool a bit so you can touch it and then scrape away squash removing any skin.<\/p>\n<p>Blend with\u00a0spices and 1\/2 cup parmesan. The parmesan will melt because the squash will still be hot. Then whip in\u00a0 1-1\/2 cups of sour cream.
