If they have seeds, they are very small and almost unnoticeable.<\/p>\n<h2>You Will Need<\/h2>\n<ul>\n<li><strong>3 Chinese Eggplants, Cut in Rounds<\/strong><\/li>\n<li><strong>2 Large Garlic Cloves, Diced<\/strong><\/li>\n<li><strong>1 Tablespoon Diced Fresh Ginger, Diced<\/strong><\/li>\n<li><strong>1 Teaspoon of Red Pepper Flakes (or more if you like spicy)<\/strong><\/li>\n<li><strong>2-3 Tablespoons <\/strong>Sesame<strong> Seed Oil<\/strong><\/li>\n<li><strong>1\/2 Cup Water<\/strong><\/li>\n<li><strong>1\/2 Green Onions Diced<\/strong><\/li>\n<li><strong>Soy Sauce<\/strong><\/li>\n<\/ul>\n<h2>How to Prepare<\/h2>\n<p>Wash eggplants with hot water and slice into 1-inch1 inch rounds. Most recipes will have you put in a hot oiled pan, but I prefer to steam my eggplant a bit before the oil is added. This helps keep the oil amount down and makes the eggplant juicy.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4960\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2017\/10\/4.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/4.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/4-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/4-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/4-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<p>Add 1\/2 cup of water to pan and put heat on medium high. Add eggplant and simmer until water is all gone. Add 1-2 tablespoons of sesame oil so it coats the pan and eggplant. Let it saute for about 5 minutes, stir often. As the eggplant starts to soften, create a well in the center of the eggplant in the pan.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4961\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2017\/10\/3.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/3.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/3-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/3-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/3-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<p>As the eggplant starts to soften, create a well in the center of the eggplant in the pan.\u00a0 Add more sesame oil and add in the garlic, ginger and red pepper flakes.<\/p>\n<p>Saute the center ingredients for 2 minutes and then mix in with everything. Eggplant should still be moist. If you want to add a little more oil, go ahead, but keep in mind the eggplant will release moisture as it continues to cook.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4962\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2017\/10\/2.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/2.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/2-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/2-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/10\/2-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<p>Still in green onions and continue to cook for 2 more minutes. I like to add more diced green onion for color when serving.
