Some of her dishes have Thai Eggplants in them, and I love the texture,\u00a0flavor and tiny soft seeds. The outer skin is also fairly thin, so it&#8217;s easy to eat and cooks down well.<!--more--><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5329\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2017\/11\/thaieggplant.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/11\/thaieggplant.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/11\/thaieggplant-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/11\/thaieggplant-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/11\/thaieggplant-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<p>Thai Eggplants are not something you&#8217;ll find in the regular markets here, so had it not been for her, I would have never known what a Thai Eggplant was or how to eat it.\u00a0 I happened to be shopping at a Korean market the other day when I came across beautiful green Thai Eggplants. <em>Do I dare try my own Thai Eggplant curry?<\/em><\/p>\n<p>Using a basic curry recipe that is my go-to favorite at home, I slightly modified to accommodate the Thai Eggplants. Needless to say, it disappeared quickly in my household!<\/p>\n<h2><strong>You Will Need:<\/strong><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5328\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2017\/11\/eggpants-cute.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/11\/eggpants-cute.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/11\/eggpants-cute-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/11\/eggpants-cute-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/11\/eggpants-cute-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<ul>\n<li>8 firm Thai Eggplants &#8211; Washed &amp; Quartered<\/li>\n<li>1 Red Pepper &#8211; Diced<\/li>\n<li>2 Cups Mushrooms ( I used Oyster Mushrooms)<\/li>\n<li>3 Tablespoons of Thai Red Curry Paste<\/li>\n<li>1 Can of Coconut Milk<\/li>\n<li>2 Cloves Garlic<\/li>\n<li>3\/4 Cup Fresh Chopped Basil Leaves<\/li>\n<li>1 Teaspoon Cumin<\/li>\n<li>1 Tablespoon\u00a0Brown Sugar<\/li>\n<li>1\/4 Teaspoon Salt<\/li>\n<li>1 Tablespoon Olive Oil<\/li>\n<\/ul>\n<p>In a rice maker, prepare eight cups of rice. I used a basmati quinoa lentil blend because I like adding a little more fiber.<\/p>\n<p>Make sure to serve the curry and rice in a large shallow bowl. Add in garlic, Thai Eggplant, and Red Peppers. Let garlic aromatics cook down with these vegetables for a few minutes and then add the mushrooms.
