Salad dressing makes great use of all those leftover squashes from holiday meals as well!<!--more--><\/p>\n<h2><strong>You Will Need:<\/strong><\/h2>\n<ul>\n<li class=\"ingredient\"><span class=\"amount\">1 large<\/span>\u00a0<span class=\"name\">butternut squash<\/span>(peel and cut into 1-inch cubes)<\/li>\n<li class=\"ingredient\"><span class=\"name\">Fresh greens (spinach, purple kale, arugula)<\/span><\/li>\n<li class=\"ingredient\"><span class=\"name\">Fennel<\/span>\u00a0(thinly sliced)<\/li>\n<li class=\"ingredient\"><span class=\"name\">Cherry tomatoes<\/span><\/li>\n<li class=\"ingredient\"><span class=\"name\">Dried cranberries<\/span><\/li>\n<li class=\"ingredient\"><span class=\"name\">Toasted walnuts<\/span><\/li>\n<li class=\"ingredient\"><span class=\"name\">Crumbled feta<\/span><\/li>\n<li>Leftover shredded turkey (for the meat-eaters!)<\/li>\n<\/ul>\n<div class=\"recipe hrecipe\">\n<div class=\"recipe-content\">\n<h2>How to Prepare:<\/h2>\n<ol class=\"instructions\">\n<li>Preheat oven to 350\u00ba.<\/li>\n<li>Toss squash with 1 tablespoon extra-virgin olive oil and dash of salt and black pepper. Roast for 30 minutes.<\/li>\n<li>In a blender, blend 1 cup cooled squash (serve remaining squash as salad topping), remaining 1\/2 cup extra-virgin olive oil, sherry vinegar, garlic, lemon juice, smoked paprika and salt until smooth.<\/li>\n<li>Dressing will be thick, so add a little water, \u00bc cup at a time, until dressing is desired consistency.<\/li>\n<\/ol>\n<p>Cover table with butcher paper, arrange ingredients as an edible centerpiece and just add tongs!<\/p>\n<\/div>\n<\/div>\n<div class=\"social-bar social-bar-btm clearfix\">\u00a0Posted with permission from <a href=\"http:\/\/deliciousliving.com\/recipes\/thanksgiving-harvest-salad?cid=nhbc\">Delicious Living\u00a0<\/a><\/div>\n","protected":false},"excerpt":{"rendered":"<p>This is a fun salad presentation!
