I made some Spinach Potato Curry today to serve over rice for lunch. Usually, I&#8217;d make a dish like this for dinner, but it was so darn easy to do, I just had to go for it.<!--more--><\/p>\n<p>Aloo Saag is a traditional Indian vegetarian curry that I order from my favorite take-out Indian restaurants, and now I can make it in minutes at home!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5469\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2017\/12\/b.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/12\/b.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/12\/b-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/12\/b-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/12\/b-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<h2>You Will Need:<\/h2>\n<ul>\n<li class=\"ingredient\"><strong>1 tablespoon olive oil<\/strong><\/li>\n<li class=\"ingredient\"><strong>1 teaspoon cumin seeds<\/strong><\/li>\n<li class=\"ingredient\"><strong>3-4 garlic cloves, chopped<\/strong><\/li>\n<li class=\"ingredient\"><strong>1 onion, finely chopped<\/strong><\/li>\n<li class=\"ingredient\"><strong>5 tomatoes<\/strong><\/li>\n<li class=\"ingredient\"><strong>\u00bd inch ginger diced<\/strong><\/li>\n<li class=\"ingredient\"><strong>4 cups of spinach leaves<\/strong><\/li>\n<li class=\"ingredient\"><strong>4 medium russet potatoes cubed<\/strong><\/li>\n<li class=\"ingredient\"><strong>1 teaspoon coriander powder<\/strong><\/li>\n<li class=\"ingredient\"><strong>1\/2 teaspoon turmeric powder<\/strong><\/li>\n<li><strong>1\/2 teaspoon cayenne pepper<\/strong><\/li>\n<li class=\"ingredient\"><strong>1 teaspoon cumin powder<\/strong><\/li>\n<li class=\"ingredient\"><strong>2 teaspoons garam masala powder<\/strong><\/li>\n<li class=\"ingredient\"><strong>water, as needed<\/strong><\/li>\n<li class=\"ingredient\"><strong>3 teaspoons of salt &amp; then additional to taste<\/strong><\/li>\n<\/ul>\n<h2>How to Prepare:<\/h2>\n<p>In your Instant Pot, put olive oil, onion, garlic and cumin seeds. Saute until onions become translucent.<\/p>\n<p>Chop potatoes into small chunks.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5473\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2017\/12\/c.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/12\/c.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/12\/c-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/12\/c-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2017\/12\/c-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<p>In a food processor, add spinach leaves and about 1 cup of water. Puree until you a liquid spinach blend. Add more water if needed. Pour into Instant Pot.<\/p>\n<p>Take tomatoes and add to food processor, blend until liquefied.
