Several years ago, we did a road trip throughout the South and no matter where we went, Pimento Cheese spread sandwiches were on the menu, so it was fun to taste regional differences. I&#8217;ve taken the recipe home with me to Southern California, but made some modifications that I think you&#8217;ll love. I have taken out the traditional mayonnaise and cream cheese and substituted in tangy smooth non-fat sour cream in its place. In addition to the<\/span><span style=\"font-weight: 400;\"> non-fat <\/span><span style=\"font-weight: 400;\">sour cream and low-fat cheddar cheese<\/span><span style=\"font-weight: 400;\">, I&#8217;ve also added some smoky paprika, garlic and jalape\u00f1o to spice things up!<\/span><!--more--><\/p>\n<p>This is a great spread to make ahead, and let the flavors develop even further.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7449\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2018\/04\/marchhero.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/04\/marchhero.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/04\/marchhero-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/04\/marchhero-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/04\/marchhero-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<p>&nbsp;<\/p>\n<h3><b>You Will Need:<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 cups low-fat shredded cheddar cheese<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u2154 cup non-fat sour cream<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 teaspoon smoky paprika<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/2 teaspoon salt<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">4 ounces diced pimentos, drained<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 cloves of fresh garlic, minced (or 1 teaspoon garlic powder)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 jalape\u00f1o (seeds out &#8211; or leave the seeds in if you love spicy!)<\/span><\/li>\n<\/ul>\n<h3><b>How to Prepare:<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Place de-seeded jalapeno in a food processor and pulse about 8 times. <\/span><span style=\"font-weight: 400;\">If you like a spicy spread, then leave a few seeds in and that will kick up the spice a notch.
