Red lentils are also a great source of protein, so it&#8217;s a nutritious soup to enjoy on a cool evening.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-6002\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2018\/01\/redlentil1.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/01\/redlentil1.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/01\/redlentil1-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/01\/redlentil1-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/01\/redlentil1-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<h3><strong>You will need:<\/strong><\/h3>\n<p>Makes about 6 servings.<\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1 medium yellow onion<\/li>\n<li>4 garlic cloves, minced<\/li>\n<li>2 teaspoons fresh ginger, minced<\/li>\n<li>2 teaspoons turmeric<\/li>\n<li>2 teaspoons nigella seeds<\/li>\n<li>1 teaspoon coriander<\/li>\n<li>salt to taste &#8211; 2 teaspoons approximately (add this last)<\/li>\n<li>3\/4 teaspoon red pepper flakes<\/li>\n<li>14-ounce can of coconut milk<\/li>\n<li>3-4 cups of water<\/li>\n<li>1 cup red lentils<\/li>\n<li>2 cups of fresh spinach leaves, chopped<\/li>\n<li>fresh lime juice (about 1\/2 lime per bowl of soup)<\/li>\n<li>optional: dried unsweetened coconut to sprinkle on top of soup<\/li>\n<\/ul>\n<h3><strong>How to prepare:<\/strong><\/h3>\n<p>In a medium saucepan, saute oil, onion, and garlic until onions become soft and golden. Add all of the dry seasonings with the ginger for several minutes to coat onion mixture.<\/p>\n<p>Pour in a can of coconut milk with 3 cups of water. Add in lentils.<\/p>\n<p>Simmer for approximate 30 minutes, stirring occasionally.
