For my Roasted Vegetarian Peppers recipe, I used <a href=\"https:\/\/amzn.to\/4fvmvqU\" target=\"_blank\" rel=\"nofollow noopener noreferrer\"><strong>European (Italian) EVOO<\/strong><\/a> for its rich, herbal flavor that it lends to the peppers.\u00a0 European EVOO is perfect for all stages of this recipe, from drizzling to baking.\u00a0Olive oil has a high smoke point (400\u00b0 F), so it can handle anything from a light saut\u00e9, baking to a deep fry.<!--more--><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-6466\" src=\"https:\/\/www.boredmom.com\/wp-content\/uploads\/2018\/03\/oil.png\" alt=\"\" width=\"810\" height=\"450\" srcset=\"https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/03\/oil.png 810w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/03\/oil-300x167.png 300w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/03\/oil-768x427.png 768w, https:\/\/stage.boredmom.com\/wp-content\/uploads\/2018\/03\/oil-500x278.png 500w\" sizes=\"auto, (max-width: 810px) 100vw, 810px\" \/><\/p>\n<h2><strong>Roasted Vegetarian Peppers with European Extra HERE Virgin Olive Oil<\/strong><\/h2>\n<h3><strong>YOU WILL NEED:<\/strong><\/h3>\n<ul>\n<li>2 Red Bell Peppers, Halved &amp; Cleaned<\/li>\n<li>2 Cloves of Garlic, Diced<\/li>\n<li>1\/2 Diced Red Onion<\/li>\n<li>2 Cups of Cooked Quinoa<\/li>\n<li>1 Tablespoon Red Chili Pepper<\/li>\n<li>1\/2 Teaspoon Salt<\/li>\n<li>2 Cups Mushrooms, Diced<\/li>\n<li>European EVOO<\/li>\n<li>4 Eggs<\/li>\n<\/ul>\n<h3>HOW TO PREPARE:<\/h3>\n<p>Heat oven to 360 degrees.<\/p>\n<p>Prepare quinoa per instructions. I like to make mine in a rice cooker so I can put it in and ignore it!<\/p>\n<p>In a medium saute pan, add 1 tablespoon European EVOO and heat. Add garlic, onions, and mushrooms. Peppers should be fork soft and eggs cooked.\u00a0 Add salt to taste.<\/p>\n<p>Serve with toast points and drizzle more European EVOO on the hot peppers.
